What It Is

Wheatgrass is the immature green blade of common wheat, harvested at 7-10 days of growth — at the jointing stage, before the plant starts forming the seed head. At this age the wheatgrass blade contains no gluten (gluten is a seed protein, not a leaf one), and its biochemistry is closer to grass species like alfalfa or barleygrass than to bread wheat.

Ann Wigmore brought wheatgrass into modern nutrition in the 1960s through her Hippocrates Institute work, inspired by Edmond Bordeaux Szekely's translations of the Essene Gospel. The popular framing leaned mystical, but the biochemistry held up: by dry weight, wheatgrass juice is roughly 25% protein (with all essential amino acids), heavy in beta-carotene, vitamin K, iron, and a broad spectrum of enzymes including superoxide dismutase (SOD), one of the cell's primary antioxidant defenses.

Chlorophyll: Structural Twin of Hemoglobin

The single fact that distinguishes wheatgrass from every other supplement:

  • • Chlorophyll's molecular structure is identical to hemoglobin's — except the central atom is magnesium where hemoglobin holds iron.
  • • Animal studies show oral chlorophyll modestly supports red blood cell production and binds carcinogenic molecules in the gut (e.g., aflatoxin) to reduce systemic absorption.
